Soave is a dry white wine made from Garganega, which over the centuries has found an ideal habitat in Veneto, outside of Verona.

It is a point genetic mutation of Pinot noir. Pinot noir is genetically unstable and will occasionally experience a point mutation in which a vine bears all black fruit except for one cane, which produced white fruit.

The Cortese grape is a variety that prefers calcareous silty soils that are not too loose and a microclimate that is not too hot to maintain good acidity.

The fruit was slowly fermented for three weeks on the skins to develop some seriously rich and texture layers. 30% aged in French barriques for 12 months and 70% in stainless steel for 24 months.
